The Shortcuts pane of the Preferences allows you to change those default keyboard shortcuts:

Check out the Zutilo extension which adds several functions not available in base Zotero through extra menu items and keyboard shortcuts.
Keyconfig is also an option to assign keyboard shortcuts to functions. Cf. this post on the forums.
